Wakey-wakey eggs & bakey! It’s the weekend, you’re craving your weekly dose of bacon… But you also want to be healthy and need that morning hit of greens. Ok, go get your green juice but while you’re out there pick up the following and rustle up my favourite breakfast…
4 eggs, soft boiled
1 pack pancetta rashers
1 pack asparagus
Coconut oil, for frying
- Bring a pan of boiling water to the boil and boil your eggs (I like mine done for 4.5 mins!)
- Heat some coconut oil in a pan and when hot enough, toss in the asparagus and cook until golden
- Take the asparagus out of the pan and wrap in the pancetta rashers and cook for a further 2 mins
- Take the eggs off the boil once your time is up and serve!
