Broccoli, pomegranate & parmesan… The perfect combination and just a few of my favourite things thrown together for you as a side salad!
300g tenderstem broccoli
1 red onion, finely chopped
1 garlic clove, crushed
150g pomegranate seeds
1 red chilli, finely chopped (remove seeds before)
Juice of 1/2 lemon
Parmesan shavings to serve
Coconut oil, for cooking
— Bring some water to the boil in your steamer, chop the ends off the broccoli and steam for 3 minutes.
— Heat the coconut oil in a large frying pan on a medium heat. Add the chopped onion and fry for 5 minutes until it starts to soften / turn golden brown.
— Then add the garlic & finely chopped chilli and fry for a further minute.
— Once cooked, add the broccoli and fry for 2-3 minutes until tender.
— Place into a salad bowl and toss in the pomegranate seeds.
— Drizzle over the lemon juice and shave some parmesan on top.
