It seems strange to think that less than a week ago our city was covered in a few inches of snow! I couldn’t be happier in the change of season this week, I am welcoming Spring with open arms and a delicious veggie salad to help heal the Heart Chakra.
The Heart Chakra is located in the centre of your chest and its element is air, it houses our senses of caring and compassion and feelings of generosity, kindness and respect.
We must eat lots of leafy greens to heal our Heart Chakra because the rising energy imparted by leafy greens feeds our expansion, growth and opening in all directions like the feelings of love and willingness.
150g Chargrilled artichokes (I buy the ones from Waitrose), chopped
150g Feta, chopped
200g Peas, boiled & chilled
1 Broccoli, flash steamed & chilled
1-2 Cos lettuces, chopped relatively finely
2 Handfuls pumpkin seeds, toasted
1/2 Lemon & olive oil to serve (I use the basil olive oil from Waitrose)
- Cook the quinoa in a small saucepan in 200ml water for c.10 mins, adding water if you need to.
- Prepare all the other ingredients and put into a large salad bowl.
- Toss gently and serve with lemon & olive oil.
I also sometimes have this with some oatcakes & hummus or a chicken breast depending on how hungry I am. Enjoy! Xo
